When using ESEARCH, how do you list the files found?  Also, how do you save the list?

ESEARCH should return an active select list that you can then follow with:

LIST filename

...or...

SAVE.LIST name

If you save the list then you can edit the list with EDIT.LIST or reactivate the list with GET.LIST.

Any magical reason why SAVE.LIST is the syntax instead of SAVE-LIST?

The old Pick system used SAVE-LIST.  Prime used SAVE.LIST.  The guys who started Unidata way back when were Prime guys.  At least that's the story I've been told.  Fortunately, both syntax variations work identically on contemporary Unidata versions.

SAVE-LIST does not seem to work with ESEARCH on our system, as far as I can see.

Is there the possibility you might have used SEARCH, which works fine at real TCL but sucks wind in SB+'s TCL?
